Chaat Masala

Chaat Masala is a spice powder mix used in the most delicious snack food around the Indian subcontinent. It has a tangy sour and salty flavour, which perfectly complements most sweet and spicy indian appetizers, many of which are heavily centred around potatoes, tomatoes and fried dough. In India, Chaat masala is also often used for dressing chopped fruit, salads, egg and cold drinks!

Chaat Masala varies from region to region, and in most places even vendor to vendor! Street food stalls usually prepare their own recipe of chaat masala for serving up to customers. The Regency recipe sticks to tradition with the highest quality ingredients for each component, giving a burst of the signature sour / salty taste that chaat masala is known for.

Chai Masala

Chai Masala is an Indian's favourite way of drinking tea. Chai literally means "tea" in Hindi, whereas "Masala" means spices, which makes sense as Indian tea is made using spices. The base spices: Cardamom, Cassia Cinnamon, Ginger and Pepper are always used in all Indian Chai Masalas. Some variants prefer Cloves, Fennel, and even Nutmegs. Our signature recipe tweaks the traditional ingredients into what we believe is the best possible tasting version. The harshness of traditional cassia cinnamon is replaced by our Ceylon Cinnamon - naturally sweet, and very light. We've swapped traditional pepper powder for freshly ground black peppers and some cubeb peppercorns. These are again less sharp and bitter, and instead more earthy, with a nutmeg / allspice like flavour. Overall the chai masala is a wonderful blend of sweet, earthy spices - true to the traditional recipe, with the exotic Regency touch. Chimichurri Spice Mix

Our new favourite spice blend, traditionally the famous accompaniment to argentinean steak but we've found it's a yummy dip for just about everything from Falafel to Beef Croquettes, Burgers, Grilled Vegetables and French Fries! This blend starts with the mellowness of parsley, oregano, with hints of garlic before leaving you with a sweet chilli flavour at the end. To use it, mix 1 part Chimichurri Spices with 1 part white vinegar and 2 parts of olive oil.

Chinese Brine Spices

A simple seasoning of our five spice powder in whole form, mixed with black peppercorns, salt and sugar to create a traditional chinese brining mix, suitable for all kinds of seafood and most meats. This is best for whole fish commonly found in southern china where the blend was developed.

Curry Powder (Classic)

Regency is proud to bring to you our hometown's recipe for Classic Curry Powder. We rarely use cream, or milk for curries (we use them a lot elsewhere!) so the flavour from the spices come through much stronger. This is because of the lack of a liquid base. For new taste buds, we suggest using this Mildcurry mix, as opposed to other curry powders which may be overwhelmingly spicy, and not as equally balanced in flavours. This Curry Powder is perfect for Indian as well as Malaysian and Chinese fusion curries.

For new taste buds, we suggest using this Mildcurry mix, as opposed to other curry powders which may be overwhelmingly spicy, and not as equally balanced in flavours.

Please note: THIS CURRY POWDER CONTAINS ASAFOETIDA, MAKING IT NOT-GLUTEN FREE. Asafoetida is a tree-sap used to give a savoury flavour to indian vegetarian cooking, and is bound together by wheat. If you would like a gluten free curry powder, please just add it to your order notes and we will freshly grind without any asafoetida!
