India's method of flavouring vegetarian dishes to have the same rich savoury flavour commonly found in meat. A housewife's favourite. Use powder as any other dry spice at the beginning of the cooking process. 

Please note: Asafoetida is a tree sap and thus very perishable when fresh. We must combine it with gum and a little amount of wheat in order to dry and transform it into a powder. Thus this is our only item that is NOT gluten free or 100% pure. We still strive to keep it as pure as possible, so our Asafoetida is 50%+ pure, and as good as we know is possible.

Serving size... 0.2 grams (small pinch after grinding)

Directions for use... Grind fresh using a Microplane or electric spice grinder. Use a small pinch at a time near the start of the cooking process to add a savoury flavour.

Industry Knowledge... 

Asafoetida is India's answer to savoury. This spice is most alike western Bay Leaves, Parmesan, and other ingredients that add that strong savoury flavour to food. As Indian cuisine is predominantly vegetarian, this flavour is hard to find elsewhere. Contrary to what you may think, Asafoetida as sold to Indian households is not a pure spice. It is in fact a blend of Asafoetida, Gum Arabic, and Flour. The Regency blend is highly flavourful, as it's 50%+ Asafoetida, as opposed to commonly found 15%-30% alternatives. The exact blend varies from manufacturer to manufacturer and brand to brand. But beware of those who add colourants such as Turmeric, or other diluting cheap ingredients - we've even seen sand! Our blend gives the spice it's natural bright colour and strong savoury flavour, while also giving it the right level of astringency preferred by Indians.

This spice can be easily added in small quantities of 1-2 grams, and with a slight bit of heat adds deep flavours to all Indian curries, lentils, soups and cutlets. Beware: Once you begin to incorporate Asafoetida in your daily Indian cooking, it's hard to turn back! The end result each time is a deep, flavourful dish with a long lasting mouthfeel.
