Basil Flakes

Basil is one of the most popular herbs around the world, used in Indian, Thai, Chinese, Mediterranean and just about any cuisine under the sun. Basil grows best in hot, dry conditions, which is why Regency's dried basil from Egypt is one of the best varieties in the world. It has a highly savoury taste thanks to highly concentrated volatile oil contents. These give it it's lovely savoury flavour, comparable to oregano, celery, carrots and cilantro. Our most popular use for these is slow cooking in a lasagne, and also sprinkling on top of freshly baked pizzas. To ensure the best natural flavour, Regency Basil is naturally sundried for preservation.

Nature's best Bay Leaves, flown in fresh each season from Turkey, where they blossom into the best of their variety. Regency Bay Leaves are hand-selected to weed out stale brown coloured leaves, so that each one packs a strong flavour.

Dill Weed

Dill Weed is a rare herb from the mediterranean, not often used in Asian cooking. It works great with fish, chicken, and for pickling. Although dill is often used fresh, fresh dill has a very short lifespan and is hard to grow, making dried dill weed also highly popular for that tell-tale herbal anise flavour. Dill Weed is the "leaf" of the dill plant. Regency Dill Weed is carefully selected tips, free of stems and other mixed parts of the plant, for maximum convenience and flavour.

Jasmine Buds

Our Jasmine Buds are from China, known for it's famous Jasmine Tea. These buds are beautifully yellowish white, with a strong jasmine fragrance, and perfect for boiling tea, making syrups and also as decoration. Jasmine is a very popular "Freshening" oil, great for keeping in drawers to avoid that musty smell.

THEY'RE ALSO VERY VERSATILE, AND WHEN DRIED, CAN BE USED TO FLAVOUR ALL MANNER OF LIQUID-BASED COOKING, SUCH AS EVEN WHEN COOKING RICE OF QUINOA!BEST USED IN SLOW COOKING, 5-10 LEAVES ARE ENOUGH TO IMPART AN AUTHENTIC HOME-STYLE COOKING FLAVOUR. Lavender

Lavender is one of the prized edible flowers of the culinary world. Regency Turkish Lavender is lighter in colour, but carries a much stronger aroma. A little bit of Regency dried lavender goes a very long way with it's intense fragrance and flavour. It goes great in salads, and can be used for baking scrumptious lavender cookies, cakes and jams. For savoury dishes, it also works much like rosemary, and you can add it to all dishes where rosemary would work too for it's own unique flavour. You can even steep some lavender in boiling water to make herbal lavender tea. It smells great, and is very relaxing. Some people also recommend it for soothing and aiding in sleep.

Lemongrass Flakes

Regency's dried Lemongrass Flakes are perfect for cooking curries, and also brewing up a batch of tea. Our Lemongrass is freshly imported from Thailand where it grows best several times a year to ensure freshness and top flavours. As with most dried herbs, a little goes a long way. Lemongrass flakes excude a lovely warm sour and slightly astringent flavour to foods. Great for using in curries, pho, stir fries, tea and best paired with kaffir lime leaves.

Marjoram

Marjoram is a highly sought after but often elusive herb in the herb kingdom. It grows under very specific conditions as it's very sensitive to cold climates. Regency Marjoram is renowned for it's highly fragrant and flavourful leaves. These give a great sweet, fruity light citrus flavour. Marjoram is also one of the most aromatic herbs cultivated, and to ensure the best natural flavour, Regency Marjoram is naturally sundried for preservation. Many people also confuse this herb for Oregano due to their similar appearance, but the taste of Marjoram is much sweeter and softer.

Mint (Peppermint)

Mint is actually an umbrella term for many types of mint: Peppermint, field mint, mint julep, spearmint... there are over 500 varieties of mint! Now bringing the fan favourite Peppermint. This mint is perfect for baking sweets, mixing with tea, and pairs well with cinnamon, chillies and other spices. Whereas spearmint is excellent for cooking savoury dishes, peppermint is great for dessert.

Oregano

Oregano is an important cooking herb, used across a wide range of cuisines. Unlike most herbs, Oregano is preferred dry as opposed to fresh, as it's flavours are more concentrated in the dried flake form. It's highly aromatic, with a herbal and slight bitter taste. Regency Oregano is made from 100 percent dried oregano leaves.

Parsley

Parsley is a highly popular herb, used around the world in a range of cuisines to add rich herbal and cooling flavours. Regency Parsley comes from the mediterranean region in Egypt, it's natural habitat of centuries, and a fine producer of many herbs we use today. Here, Parsley tastes sweeter and richer than common herb varieties. Our parsley is also sundried for preserving the maximum flavour and aroma.

Rosemary

Rosemary has recently become a highly desired spice in modern cooking. Rosemary is native to the Mediterranean and Central Europe, and Regency gets ours from Morocco. Here, Rosemary naturally grows to much longer length and bright yellow leaves with fuller flavour including orange and caraway notes, known in trade as Gold quality. It has many culinary and medicinal uses, and is most popular for cooking roast meats and stuffings. Our Rosemary is already removed from the branches, and is this much more convenient for use in cooking than fresh. In most cases, it also tastes better!

Sage

Sage is not so well known in Asia, but extremely popular in America and Europe. Sage has very strong flavour, so a little goes a long way, especially when using these high quality sage leaves - far more potent than flakes. This sage is also great for making sage butter, and in bouquet garnis, as it's easy to remove and keep aside after cooking. In it's natural origin in Israel, Sage leaves grow much thicker and larger, developing higher volatile oil contents than most countries. Sage has been growing here in Central Europe since the middle ages. One large leaf is enough for making a delicious sage tea, with locals drink to have more peaceful sleep. To ensure the best natural flavour, Regency Sage is kept vacuum sealed until sale.

Summer Savory Flakes

Summer Savory Flakes from Turkey. Perfect for adding a deep warmth to soups, stews, and stuffings for turkey, chicken, sausages.... the list goes on! Anything that is savoury in flavour can get better by adding the aptly named Savory Flakes. Not to be confused with it's mintier cousin, Winter Savory, these Summer Savory flakes are sweeter and more mellow.

Tarragon Flakes

Tarragon is one of the rarer herbs in cooking, but that doesn't stop it from being one of the most delicious. One whiff of the smell and you feel like you're actually sniffing chocolate. Cook with it for gorgeous deep sweet flavours of aniseed and vanilla. Our Regency Tarragon comes from Spain. In the culinary world, French and Spanish Tarragon are known to be some of the best in the world - we've found that while french tarragon is better fresh, Spanish Tarragon is much more potent when dry. It has a stronger flavour, and also the anise flavour notes, plus it's much more long lasting.

Tejpatta (Indian Bay Leaf)

Indian Bay Leaves are very different from the turkish Bay Leaf. They carry aromas and flavours of Cassia Cinnamon, which works really well when used in Indian cuisine. They're also bigger in size, averaging about twice the length. Try simmering these Tejpatta in a dal, vegetable soup or light curry for maximum effect.

Thyme

Thyme is an essential herb in modern cooking, it's one of the common parts for a Bouquet Garni, and of Herbes de Provence, the most popular western herb blends in cooking. Fresh thyme has a shelf life of a mere few days and often cumbersome to use. By contrast, dried thyme can keep flavour for over a year when stored properly, and doesn't need the hassle of separating the leaves from the plant sprigs and twigs.

Verbena isn't always on the top of people's spice racks, but it very much should be! Verbena is known for it's mesmerising lemon aroma and flavour, and as a result is extremely popular in teas. Verbena is often also used in skin products such as moisturizers and soaps as a natural perfume!
