Agar Agar Powder

Pure Agar Agar Powder for use in pastry and cooking. Agar Agar is a seaweed grown in the south china sea. Originally a dark brown colour, this is boiled several times and then washed to remove all colour, smell, taste and impurities, resulting in long wrinkled strands of seaweed. The seaweed is dried intensely in special isolated warehouses to avoid any new smell from mixing with it, and then crushed into a fine powder.

Agar Agar Powder has natural gelling properties, much like gelatine and is a substitute for gelatine in puddings, jellies, and some soups and broths. Originally very popular amongst muslims and hindus who cannot eat gelatine for religious reasons, Agar Agar is now very popular as it's also completely vegan and environmentally sustainable.

Regency Agar Agar Powder is made from specially selected weeds that have higher gelstrength than your average agar agar (measured in grams per litre), and has a gel strength of approx 600g/l.

Allspice


Pure Allspice berries, the essential ingredient to authentic Caribbean and Middle Eastern cuisine! These berries hail from Turkey and work great when infused into a variety of stews. It's equally special when powdered, as it carries notes of Nutmeg and Cinnamon - unlike common Peppercorns. Get creative and see what other uses you can come up with for this exotic berry. Also known as: Jamaica pepper, pepper, myrtle pepper, pimenta, turkish Yenibahar, pimento, newspice, all spice.

Amla (Gooseberry)

Amla are Indian Gooseberries. Very sour, strong flavours, and also also a natural wonder. The Amla tree was original considered sacred by Hindus, and said to have originated from the nectar of gods. So much for history - what we care about at Regency Spices most is the flavour. Amla Powder is a great way to add variety to snacks by using as a garnish. You can also mix with honey, turmeric, ginger, or pepper to make an Amla Chutney. This works great as a dip for fried Indian snacks such as Samosas and Pakoras. Recently, western medicine has also discovered the benefits of Amla for hair - dry Amla Powder is very commonly used as a key component in shampoos, hair oils, wraps and tonics for maintaining luscious healthy looking hair.

Aniseed

This seed is not to be confused with Star Anise, Aniseed is an entirely different spice found in the Mediterranean and is one of the most popular spices in cooking today because of it's unbeatable sweet and fresh taste. Regency Aniseed from Turkey imparts a beautiful liquorice, cardamom and honey flavour. It's highly aromatic, and very convenient to use, just like any other seed. Many times in industry, it's also diluted with Carom Seeds, a seed which looks very similar, but has an entirely different flavour. Also known as: anise, saunf, sombu, badishop, variyali.

Annatto Seeds

Pure Annatto Seeds from South America, Peru. These seeds are perfect for putting into curries - with that turmeric, ginger paprika flavour. They're also fantastic in mexican and south american cuisine. Make into a paste and use for fish and tacos. Annatto Seeds are a brilliant deep red colour, and also commonly used as a food colouring in Red Velvet Cakes and other pastries.

Asafoetida (Hing)

India's method of flavouring vegetarian dishes to have the same rich savoury flavour commonly found in meat. A housewife's favourite. Use powder as any other dry spice at the beginning of the cooking process. 

Please note: Asafoetida is a tree sap and thus very perishable when fresh. We must combine it with gum and a little amount of wheat in order to dry and transform it into a powder. Thus this is our only item that is NOT gluten free or 100% pure. We still strive to keep it as pure as possible, so our Asafoetida is 50%+ pure, and as good as we know is possible.

Black Cumin (Nigella)

Black Cumin is a bitter spice, used sparingly to add an intense depth of flavour to food. It's best used to flavour liquors, spice rubs and bread. Use in small quantities, this exotic spice goes a long way!

Cacao Nibs (ORGANIC)

Cacao is one of the world's most popular flavourings. It's the source of chocolate! Pure Cacao, although full of flavour, is also bitter, so it's usually mixed with cream and sugar to balance out the flavour. Regency Cacao comes from Peru, where we find a lovely caramel fruity chocolate flavour, grown and processed to perfection in the wild Amazon rainforests. Cacao Nibs are amongst the purest Cacao Products possible that are suitable for long term storage. Cacao Nibs are the result of a long and heartfelt farming process, where nearly all defects in bad cultivation can be noticed. Cacao Nibs are also very high in fat, making them ideal for melting down into cacao butter for ganaches, creams and pure chocolate. Regency Cacao Nibs are already roasted for maximum flavour and convenience, and are also USDA and EU Organic Certified.

Regency Cacao comes from Peru, where we find a lovely caramel fruity chocolate flavour, grown and processed to perfection in the wild Amazon rainforests. Cacao Powder is the result of a long, labourous and mechanical process previously not possible, as it needs to be milled at a cooler temperature below 50 degrees C to better preserve all the flavours and nutrients. Traditional cocoa grinding generates a lot of heat, and thus resulting in a different flavour and nutrient profile. Regency Cacao Powder is also USDA and EU Organic Certified.

Caraway seeds look remarkably similar to Cumin, and taste like a burst of various cooling herbs. Ours contain upwards of 3% essential oils, making them the amongst the best of their species. Cardamom (Green)

The word Cardamom is synonymous with exotic spices, and righly so - it's one of the most expensive and the most flavourful! Regency Cardamom is sourced from it's ancient home at the Himalayas, and contain a variety of flavours not found in any other varieties, such as the cheaper white and black pods. The aroma and taste is much more pleasant, and intensely strong. Perfectly pairs with all sweet dishes, and can also be used to cleverly add a depth of flavour to savoury food.

Chilli (Ancho)

You may or may not know it, but all the world's chillies can be traced back to Central America, and as such, these chillies can be thought of as the original chillies! Chillies from this part of the world, like our Ancho Chilli from Peru, carry much more flavour and aroma than commonly found chillies elsewhere in the world. What they don't pack the highest punch in heat, Ancho chillies more than make up for in flavour. They're sweet and lightly peppery, reminiscient of raisins, and have a slight smoky aroma to them. Theye great ground and put into simple ingredients like potatoes, cream & tomatoes.

The original Indian Chilli Pepper. There's no better way to make Indian cooking taste authentic without using Kashmiri Chillies. These have a medium potency, and in small quantities can be enjoyed by those who don't like their food too spicy too. Chilli (Mirasol)

Mirasol chillies are a true natural marvel! They may be chillies but they smell like fruity gooseberries or cherries. They'resweet, full bodied and very mild in heat, soyou could even munch on them directly like a fresh fruit! Chilli (Pakistan)

Pakistan Chillies are super hot, red, little balls of spice, perfect for cooking. These hot chillies have a glorious colour, so they also paint each dish red when used. Pakistan chillies are great when you want to add a lot of colour, along with a strong pack of spice. On the Scoville scale, they clock in at about 50,000SHU. These chillies are very popular in both Indian and Middle Eastern cooking. They have a low seed percentage, meaning they are also great for powdering.

Chilli (Panca)

Pancas a rare but favourite chilli in Peru.You may or may not know it, but all the world's chillies can be traced back to Central America, and as such, these chillies can be thought of as the original chillies! Panca chillies are a little spicy, and best used in stews and fish dishes. You can also use Panca chilli flakes to rub into meat before grilling. The smoky berry flavour in this chilli also greatly complements cacao, and thus is a favourite chilli to use blended with chocolates.

Peri Peri chillies are some of the hottest naturally growing chillies on earth. These exotic chillies pack a punch in terms of heat, but are also extremely flavourful otherwise. They are very aromatic, and you get a mild sweet / lime sensation before the heat kicks in. Great for sauces, and of course the key ingredient in the famous Peri Peri Chicken.
