Chironji

Chironji is an ancient, native spice known and used almost exclusively in India. It's related to the nut family, and flavour could be described closest to sweet almonds crossed and a texture like a soft pinenut. They can be eaten raw, but toasting is often preferred. Chironji is extremely high in natural fats and thus very difficult to grind into a powder without turning into a thick paste. As a result, they are commonly use as a thickener in Indian pastries, pudding-like desserts, savoury sauces and batter. One of the most well known uses is in making rich, meaty Kormas due to the subtle sweet flavour.

Special Note: Chironji is extremely perishable and must be stored in the fridge / freezer to avoid spoiling.

Cinnamon (Ceylon)

Cinnamon is one of the most well known spices in the world! But most Cinnamon sold is actually Cassia Cinnamon, not True Cinnamon. Cassia Cinnamon, fine in it's own right, is blown out of the water with sweetness by this Sri Lankan Cinnamon. Sri Lankan True Cinnamon comes in many grades, each regulated by rigid ISO standards. Commonly sold True Cinnamon is sold in C5 quality - thick long sticks. However, the finest is our special Alba grade Ceylon Cinnamon. Delicate, thin, layer upon layer on fine perfuming Cinnamon. It's a pastry chef's dream cinnamon, and the best in the world - although much more expensive than it's Cassia counterpart. Freshly grind to use - this Cinnamon can even be crushed with your bare hands, but we suggest using a pestle and mortar. You can even infuse the taste and aroma from single sticks by stirring in teas, coffees, and liquid based desserts.

Cinnamon Cassia (Raw)

Pure Raw Cassia Cinnamon, freshly collected each season from the heart of China. This is the spice most popularly used to make Cinnamon Powder. Ours is the pure whole version, so you can trust the high quality product. Usually these raw cassia cinnamon barks are processed by cutting, shaving off the skin, and slicing into neat sticks. In it's raw form, the flavours are much stronger, just less pretty. If you're using it to make powder, this is certainly the superior product. You can also use small pieces to flavour stocks, soups and curries. Freshly ground it can be used in all manner of desserts and breads too.

Cinnamon sticks (Cassia)

Cassia is one of the most well known spices in the world! Commonly known in the US, and Europe as Cinnamon, this spice actually comes from the INDONESIAN bark known as Cassia. Our Cassia Cinnamon sticks are the premium version to the ordinary variety. They are deskinned, trimmed, and hand selected to provide the strongest sweet and spicy flavour, reaching their full potential. Freshly grind and use in small quantities, or use the entire stick to flavour large quantities of stock whole. These beautiful sticks are truly a pastry chef's dream spice.

Citrus Peel

Citrus Peel (Or Chen Pi) as they are commonly known are a curious spice sold almost ubiquitously throughout China, particularly the South. They come from the skin of a mandarin (tangerine), so taste-wise they're very similar to lemon rind, except these ones dried... and aged. These Citrus Peels have been aged for 5 years in cool, dry, dark conditions to bring out the full flavour. Usually a minimum of 3 years is needed for good flavour, and at 5 years we find the best flavour is already present. Beyond 5 years, citrus peels get more and more expensive, with no discernable taste difference to us... possibly due to the large number of fakes! Citrus peels are actually known as one of the "3 treasures" in Guangdong Province, where it is almost exclusively used as in herbal medicine, not cooking! Chen Pi gets more expensive with age, as they get darker in colour, losing moisture. The aroma is extremely sharp, sweet, and taste is slightly bitter. We love using these for cooking "Tong Sui" - traditional sweet, warm soups and custards at the end of a Cantonese meal.

Cloves

Cloves are one of the original ancient spices, and our first ever product. Naturally, we know them inside out. These Cloves are freshly flown in from the Spice Islands in Zanzibar, or the Spice Islands in Indonesia each season, depending on which had the better climate. Each glows a gorgeous exotic red colour, and adds a flavour like no other cloves can dream to produce. Popular in many high end and simple traditional cooking, cloves can be used almost anywhere to add lovely fruity, peppery and herbal flavours.

Coconut (Dessicated)

Use Regency Dessicated Coconut as a garnish for dals, cookies and pastries. Dessicated Coconut is also a great ingredient to use in making cakes, crab cakes, and curries. We also love to sprinkle some on top of a lovely thai curry for that extra bit of sweet luxury.

Coconut Cream Powder

Use Regency Coconut Cream Powder as a deluxe substitute for coconut milk or coconut cream. Coconut cream is a vegan substitute for milk, use as a base for yoghurts, puddings, and in curries. Regency Coconut Cream Powder has a great fat content, mix with a ratio of 2:1 coconut cream powder:water for a luscious thick coconut cream, or mix with a 4:1 ratio for a delicious coconut milk. Our coconut cream powder is of Malaysian origin, which has a naturally higher sugar content and tastes naturally sweet. You may find you don't need to add sugar to desserts when adding this coconut powder.

Coconut Flakes

Try Regency Coconut Flakes as a garnish for cookies, cakes, salads, curries and fish dishes. Our coconut flakes have no additives whatsoever, and contain an all-natural light crunch and sweetness. They are also a great ingredient for topping on cereals and mixing in your trail mix. The coconut flakes are gently oven dried to maintain good colour and flavour.

These coconut flakes come from indonesia, famous for their use of coconut in seafood and curries, so we highly recommend adding them into your fish curries, stir fried with prawns, and shrimp to add some variety.

Curing Salt (Prague Powder 1)

Curing salt comes in many types, but always with the same purpose: used to facilitate food preservation and extend shelf life while pickling the spice. The most common salt of these is Pink Salt, also known as Instacure / Prague Powder #1. This salt, unlike pink himalayan salt, is pink due to a small amount of added red dye, traditionally to stop it being confused from tablesalt.


Our Curing Salt is mainly table salt, with around 6.25% sodium nitrate dried and added in. It is best used for meats that require short curing times and can be cooked and eaten shortly after the curing process. Sausages, Pastrami, Corned Beef and others are perfect for this.
