They're also fantastic in mexican and south american cuisine. Make into a paste and use for fish and tacos. Annatto Seeds are a brilliant deep red colour, and also commonly used as a food colouring in Red Velvet Cakes and other pastries.

Directions for use... Annatto seeds can be ground and used as a vibrant red natural food colouring. Also very commonly used in Latin American and Philipino cuisine - fry the seeds in oil to release a ginger-paprika-peppery flavour. Discard the seeds and use this oil to cook meats, fish and curries.
