Thyme is an essential herb in modern cooking, it's one of the common parts for a Bouquet Garni, and of Herbes de Provence, the most popular western herb blends in cooking. Fresh thyme has a shelf life of a mere few days and often cumbersome to use. By contrast, dried thyme can keep flavour for over a year when stored properly, and doesn't need the hassle of separating the leaves from the plant sprigs and twigs.

Industry Knowledge... Thyme is one of the most popular western herbs in modern cooking. Thyme is used in most herb blends ranging from bouquet garni, to Za'atar in the Mediterranian. It can be said that no herb collection is complete without Thyme. Studies have also shown medicinal benefits for the herb, such as a tea made by infusing Thyme in water used to soothe coughs and bronchitis. Thyme also has an ancient history - the Ancient Greeks used it in baths and burnt it as incense in their temples. The Romans believed it purified rooms, as well as appreciate it's use in cooking. As a result, Thyme spread quickly throughout Europe from ancient times, and has been popular ever since.Unlike many herbs, Thyme retains almost all of it's flavour in drying, further making it easy to decide to use dried Thyme as opposed to fresh. In industry, Thyme is sold on the basis of it's volatile oil content, as with most other herbs. Each herb's unique volatile oil content is what gives them their flavour. The greater the volatile oil, the more flavour in each Thyme leaf. Besides examining the uniqueness of each variety of Thyme, we also pay attention to making sure that we get the highest quality of the best tasting variety. Hence at Regency, we've settled on the highest naturally possible grade that Turkish Thyme leaves can attain.
