Industry Knowledge... Za'atar is originally the name given to a variety of Wild Thyme grown around the middle east and parts of Europe. This wild thyme is also the essential ingredient to make traditional Za'atar. However, in recent years, the production of wild thyme has not been enough to meet demand, and the herb has become a very rare commodity. As a result, most spice manufacturers and cooks of the spice blend Zaatar substitute wild thyme for a blend of herbs such as Marjoram, Oregano, Thyme and Basil. These imitate the flavour to some extent, but pale in comparison to the traditional recipe which we are providing here at Regency, made with Za'atar growing alongside the mediterranean sea.As with all spice blends, it's important to note that many manufacturers also dilute and add colour to their Za'atar using ingredients such as wheat flour to fill up weight, but add zero taste! Our Zaatar is pure herbs and spices to give that true authentic feel of being in the Arabian Peninsula and enjoying it like a local!
